PellegraIn 1915, experiments began to find the cause of the disease, pellagra. In 1915 more than 10,000 people died of pellagra in the United States alone. The work is conducted by Dr. Joseph Goldberger upon a dozen vounteers from the inmates of a Mississippi state prison at Jackson. By adjusting the food in their meals, it is eventually found that pellagra is caused by poor diet. Improving diet remedies the potentially fatal disease. The experiment is a medical classic. Goldberger's studies alerted people to the importance of essential nutrients found in diets and it began the "biological age" in nutrition research during which the connection was made between disease and lack of essential nutrients in the diet which we call vitamins. |
